Lemon Blueberry Bread

Ingredients
- 1 cup butter softened
- 2 cups sugar
- 4 large eggs
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 cups blueberries fresh or frozen
- 1 large lemon zested and juiced
- 1 teaspoon vanilla
Instructions
- Cream butter and sugar. Beat in eggs. Sift dry ingredients and add
- alternately with milk. Fold in blueberries, lemon zest and vanilla.
- Reserve lemon juice for glaze. Bake at 350 degrees in 2 large greased and
- floured loaf pans for 50 minutes or until bread tests done. It takes
- longer if you use frozen berries. Let cool in pans for about 15 minutes
- before you turn out bread.
- LEMON GLAZE (optional)
- Mix juice of 1 lemon with confectioners' sugar until it has the
- consistency of a glaze. Pour over warm bread and let soak in.
