Green Chili Chicken Roulade

Ingredients
- 8 boneless skinless chicken breasts
- 6-8 green chiles roasted, peeled & seeded
- 1/2 lb. Monterey Jack cheese cut into strips
- 1/2 cup Ritz cracker crumbs
- 1/4 cup Parmesan Cheese
- 1-3 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1/4 teaspoon pepper
- 6 tablespoons butter melted
Instructions
- Preheat oven to 400 degrees. Spray a 13x9 baking dish with Pam.
- Pound chicken until flat.
- Put a green chili and a strip of cheese in the center of each chicken breast. Roll up.
- Combine cracker crumbs, parmesan cheese, and spices.
- Dip chicken in melted butter then roll in bread crumb mixture. Place in dish, seam side down. Cover and chill.
- Bake 25-40 minutes at 400 degrees.
