Goat Cheese–Stuffed Peppers
The perfect bite is all about balance—the sweet and spicy kick of red cherry peppers contrasts beautifully with cool, creamy goat cheese. Fresh mozzarella works as well.

Ingredients
- 24 pickled sweet red cherry peppers such as peppadews
- 6 ounces goat cheese
- 1/4 cup fresh flat-leaf parsley chopped
- Freshly ground black pepper
Instructions
- Slice a thin piece off the bottom of each pepper to help them stand upright.
- In a medium bowl, mash the goat cheese with a fork to soften it. Stir in the parsley and 1⁄8 tsp pepper. Stuff each pepper with about 1 tsp of the cheese mixture.
