Ginger-Glazed Pork Tenderloin
Servings: 6
Ingredients
- 2 lbs. pork tenderloins
- salt to taste
- 1/3 cup apricot preserves
- 3 large garlic cloves minced
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger peeled and grated
- green onions to garnish
Instructions
- Place pork tenderloins in a baking dish sprayed with Pam or a use a
- non-stick pan. Sprinkle evenly with salt.
- Combine preserves and next 4 ingredients. Spread evenly over pork.
- Bake at 425 degrees for 45 minutes or until cooked to desired doneness.
- Remove from oven; cover and let stand 10 minutes. Garnish with green onion
- strips if desired. Serve over rice.
Notes
NOTES : I make more of the apricot mixture because we like a lot of sauce to serve over rice, etc. I usually use a 12 ounce jar of preserves and triple the garlic & soy sauce. I usually use a nice large piece of ginger.
