Crab Stuffed Flounder Rolls

Ingredients
- 8 flounder fillets
- 1 lb. fresh jumbo lump crab meat picked clean
- 1 lemon juiced
- salt
- Old Bay seasoning to taste
- 1/4 cup Vidalia onion finely minced
- 1 egg beaten
- 1 roll Ritz cracker crumbs
- salt & pepper to taste
- 8 lemon slices
- fresh parsley finely chopped
- 4 tablespoons butter melted
- 8 ounces white wine
Instructions
- Preheat oven to 400 degrees.
- Oil a cast iron skillet with olive oil.
- Mix crab meat, lemon juice, dash salt and Old Bay, onion, egg and 1/2 of Ritz cracker crumbs.
- Season underside of flounder with salt & pepper. Spoon crab mixture over fillets, roll up and secure with a toothpick. Place toothpick side down in cast iron skillet.
- Place a lemon slice on top of each flounder roll. Sprinkle with remaining Ritz cracker crumbs & parsley, and pour melted butter over all. Pour white wine around fish. Bake about 20-25 minutes until golden & flakey.
