Crab Cakes (Vicki Latimer)

Ingredients
- 1 lb. jumbo lump crabmeat picked clean
- 1/2 cup mayonnaise
- 1 large egg beaten
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon hot sauce optional
- seafood seasoning
- 1 cup saltine cracker crumbs
Instructions
- Mix all ingredients well and fold with cracker crumbs into crabmeat. Form into 8 patties and place on cookie sheet in refrigerator to firm up. Right before serving, fry to a golden brown in canola oil.
