Cowboy Salsa (aka Cowboy Caviar)

Ingredients
- 1 can shoepeg white corn
- 15 ounces black beans washed & drained
- 1 large jar banana peppers chopped
- 1/2 bunch green onions chopped
- 1/2 bunch cilantro chopped
- 5 Roma tomatoes chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin powder
- 2 large garlic cloves minced
Instructions
- Combine ingredients for salsa. Mix dressing ingredients and add to salsa. Serve with chips (Doritos Scoops are great).
Notes
I leave out the onions.
