Cheese Wafers

Ingredients
- 1 cup butter softened
- 2 cups sharp cheddar cheese shredded
- 2 cups all-purpose flour sifted
- 1/4 teaspoon salt
- 1 teaspoon cayenne pepper
- 1 tablespoon sugar
- pecan halves
Instructions
- Preheat oven to 350 degrees. Freshly shred cheese and let sit at room
- temperature. Cream butter and cheese. Sift dry ingredients together.
- Add to butter and cheese and mix well with mixer. Chill enough to be able to shape
- into small balls with damp hands. Press a pecan half into each ball.
- Refrigerate dough between batches. Bake on baking sheet sprayed with Pam
- for about 15 minutes or until golden around edges. Let sit on baking sheet about
- 10 minutes before removing to a wire rack to cool before storing.
Notes
I shred a 10 oz. package of Kraft Extra Sharp Cracker Barrel Cheese and use all of it. For thinner wafers, make smaller balls and you will have twice as many only thinner.
