Black Bean Soup
Servings: 5
Ingredients
- 1 tablespoon olive oil
- 1/2 cup celery chopped
- 1 cup onion chopped
- 1 10 ounce can Rotel diced tomatoes & green chilies
- 1 teaspoon chicken bouillon
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 4 teaspoons minced garlic
- salt & pepper to taste
- 3 15 ounce can black beans undrained
- 1/2 cup minced parsley if desired
- 1 cup minced ham if desired
Instructions
- In large pot, heat olive oil and saute celery and onions. Add remaining
- ingredients and bring to a boil. Reduce heat and simmer 15-20 minutes.
Notes
NOTES : Garnish with sour cream, cheddar cheese, avocado, or green onions. Serve with crusty bread or tortilla chips.
