Sherry’s Angel Hair Pasta with Chicken & Mushrooms

Angel Hair Pasta with Chicken & Mushrooms

Ingredients

  • 8 ounces angel hair pasta
  • 2 boned and skinned chicken breast halves
  • 2 tablespoons butter divided
  • 2 tablespoons extra virgin olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 8 ounces fresh mushrooms sliced
  • 1/4 cup white wine
  • 2 tablespoons fresh parsley minced
  • salt and pepper to taste
  • Parmesan cheese to taste

Instructions

  • Cook pasta.
  • Meanwhile, cut chicken in 1/4 inch-thick slices or bite-size pieces and
  • set aside.
  • In a 12-inch skillet, melt 1 tablespoon butter along with olive oil over
  • medium heat. Cook chicken, onion and garlic until chicken is almost done.
  • Add mushrooms and cook for l minute. Add 1 tablespoon butter and cook
  • until chicken is done. Add wine and parsley and simmer 3-4 minutes.
  • Season with salt and pepper.
  • To serve, spoon chicken mixture over hot, drained pasta and top with
  • Parmesan cheese.
