Chicken Brunswick Stew
Servings: 12
Ingredients
- 1 whole chicken
- 3 lbs. red potatoes diced
- 1 lb. baby lima beans frozen
- 1 lb. white whole kernel corn frozen
- 3 large onions diced
- 1 large canned tomatoes crushed
- salt and pepper to taste
- Texas Pete Hot Sauce to taste
- 4 cups chicken stock
Instructions
- Boil chicken, debone and chop. Put chicken, chicken stock, potatoes, lima beans, corn,
- tomatoes & onions in a large pot. Add salt and pepper and Texas Pete.
- Simmer 2-3 hours.
Notes
NOTES : Using a store bought rotisserie chicken makes this much easier and you can use canned chicken broth or stock. Do not substitute another hot sauce for Texas Pete.
