Roasted Green Beans with Crispy Shallots
This even works well with frozen green beans that have been thawed.

Ingredients
- 1 lb. haricots verts trimmed
- 1/2 cup thinly sliced shallots
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- freshly ground black pepper to taste
Instructions
- Preheat oven to 450°.
- Combine haricots verts, shallots, olive oil, and kosher salt on a foil-lined baking sheet. Roast at 450° for 10 minutes or until crisp-tender.
- Note: I sometimes turn on the broiler to crisp the shallots and green beans to our liking.
