Black Beans & Rice

Ingredients
- 2 tablespoons olive oil
- 1 medium onion chopped
- 2 large garlic cloves minced
- 15 ounces black beans canned, undrained
- 4 ounces sausage cooked and drained
- 3/4 teaspoon Italian seasoning
- Tabasco sauce to taste
- salt and pepper to taste
- 2 cups hot cooked rice
Instructions
- Heat oil in large skillet over medium heat until hot. Saute onion and
- garlic about 3-5 minutes or until tender. Stir in all remaining
- ingredients except rice. Simmer, uncovered, about 10 minutes. Serve over
- rice.
Notes
NOTES : I use either Hillshire Farm Beef Hot Links or Jimmy Dean Hot bulk sauage. Canadian bacon, diced ham, or turkey or chicken sausage is also good. Instead of Italian seasoning, thyme & oreganeo may be used. Also good served over saffron rice.
