Chicken Stir Fry with Greek Feta

Ingredients
- 8 ounces of boneless chicken breast halves
- 2 tablespoons soy sauce
- 4 tablespoon extra virgin olive oil
- 1 ½ teaspoons garlic powder
- 2 cups of broccoli florets
- 1 cup of cauliflower
- 1 cup thinly sliced carrots
- 1/2 white onion thinly sliced
- 2 pinches of oregano
- 1/2 cup of Greek* or French Feta*
- 1/2 cup raw brown or white rice cooked according to package directions
Instructions
- Cut chicken into ½-in. strips. In a large skillet, heat the oil. Stir-fry chicken until no longer pink,
- about 3-5 minutes, sprinkle oregano.
- Add broccoli, carrots, onions, cauliflower and stir-fry for 3-4 minutes, or until crisp and tender, sprinkle the garlic powder, and mix all ingredients together, including cooked rice.
- Before serving add the Feta and mix once.
