Angel Hair Pasta with Chicken & Mushrooms
Servings: 4
Ingredients
- 8 ounces angel hair pasta
- 2 boned and skinned chicken breast halves
- 2 tablespoons butter divided
- 2 tablespoons extra virgin olive oil
- 1 small onion chopped
- 2 garlic cloves minced
- 8 ounces fresh mushrooms sliced
- 1/4 cup white wine
- 2 tablespoons fresh parsley minced
- salt and pepper to taste
- Parmesan cheese to taste
Instructions
- Cook pasta.
- Meanwhile, cut chicken in 1/4 inch-thick slices or bite-size pieces and
- set aside.
- In a 12-inch skillet, melt 1 tablespoon butter along with olive oil over
- medium heat. Cook chicken, onion and garlic until chicken is almost done.
- Add mushrooms and cook for l minute. Add 1 tablespoon butter and cook
- until chicken is done. Add wine and parsley and simmer 3-4 minutes.
- Season with salt and pepper.
- To serve, spoon chicken mixture over hot, drained pasta and top with
- Parmesan cheese.
