Standing Rib Roast

Ingredients
- 5 1/2 lbs. beef rib roast room temperature
- salt and pepper to taste
Instructions
- Place roast, rib side down, on rack in shallow roasting pan. Salt and
- pepper. Do not cover. Bake l hour. Turn oven off. Let roast sit in
- oven for 2 hours. Do not open oven door. Cook an additional 30 minutes
- before serving for a rare roast and an additional 45 minutes for a medium
- roast.
