Parmesan Baked Scallops
Servings: 4
Ingredients
- 1 lb. large scallops
- 1/2 cup bread crumbs
- 2 teaspoons butter
- 1/2 cup white wine
- 4 tablespoons Parmesan cheese grated
- salt
- fresh ground black pepper
- 1/2 cup parsley fresh
- 1 large lemon squeezed
- 1 large garlic clove pressed
Instructions
- Preheat oven to 350 degrees. Rinse scallops and place in a small baking
- dish sprayed with Pam and just large enough to hold them in one layer.
- Squeeze lemon over scallops. Sprinkle with bread crumbs and toss to coat.
- Combine melted butter & garlic and pour over scallops. Add wine to
- baking dish and bake for 15 minutes. Remove from oven and turn on
- broiler. Sprinkle scallops with Parmesan cheese, salt and fresh ground
- black pepper and place under broiler for 5-10 seconds. Watch carefully -
- they will brown quickly. Serve on bed of linguine or rice if desired and
- sprinkle parsley on top.
