Mediterranean Orzo

Ingredients
- 1 lb. orzo cooked
- 2 tablespoons olive oil
- 2 cloves fresh garlic minced
- 1/2 cup sun-dried tomatoes oil-packed, drained and chopped
- 1 yellow pepper chopped
- 1 green pepper chopped
- 1 red pepper chopped
- 1 large onion chopped
- 1/4 cup black olives chopped
- 1 teaspoon oregano
- 1/2 teaspoon ground black pepper
- 1/4 cup parsley chopped
- 1/4 cup red wine vinegar
- 4 ounces feta cheese crumbled
- salt and pepper to taste
Instructions
- Heat oil in skillet. Add garlic, sun-dried tomatoes, peppers, and onion.
- Saute about 5 minutes. Toss together hot cooked orzo, vegetables,
- olives, seasonings, parsley,red wine vinegar and feta cheese.
Notes
NOTES : Parmesan cheese really adds a lot of flavor. Add vegetables such as steamed broccoli or asparagus and fresh chopped tomatoes. Grilled chicken or shrimp makes this a great one dish meal. It is also delicious cold.
