Green Chili Stew

Ingredients
- 1 pound pork tenderloin cubed
- 1 medium onion chopped
- 2 cloves garlic chopped
- 2 tablespoons flour
- 2 tablespoons vegetable oil
- 6 large green chiles roasted and peeled
- 1 large potatoe cubed
- 3 carrots peeled and chopped
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon Mexican oregano
Instructions
- Dredge pork in flour. Heat oil and brown pork. Add onion and garlic and cook 5 minutes. Add chicken broth, chopped chilies, tomatoes, carrots, potatoes, salt, pepper, & oregano. Cook until veggies are tender. Adjust seasoning. Serve with flour tortillas, cornbread, cheese, avocados, sour cream, cilantro or whatever you want. This dish cooks well on low in a crock pot.
