Shrimp Scampi

Ingredients
- 6 tablespoons extra virgin olive oil
- 6 tablespoons butter
- 2 large shallots finely chopped
- 4 large garlic cloves finely minced
- 2 large lemons
- 2 lbs. shrimp peeled & deveined
- 1/2 cup dry vermouth
- salt & pepper to taste
- 4 tablespoons parsley freshly chopped
- rice angel hair pasta or linguine
Instructions
- Heat a large skillet over medium to high heat. Add olive oil and butter and melt together. Add shallots and cook a minute or two and then add garlic for another minute. Add juice and zest of 2 lemons, salt & pepper and vermouth or dry white wine. Add shrimp and cook tossing until shrimp are pink. They are now done and ready to be served over rice or pasta with the sauce. Garnish with parsley.
Notes
NOTES : You may substitute white wine for the vermouth. I like it best with angel hair pasta.
