Roasted Salmon with Tomatoes, Basil, & Capers

Ingredients
- 4 salmon fillets
- salt
- Mrs. Dash Lemon Pepper Seasoning Blend
- 1 cup Roma tomatoes seeded and chopped
- 1/4 cup fresh basil slivered
- 2 tablespoons capers drained
- Parmesan-Crusted Cauliflower
- 4 cups cauliflower flowerets washed and dried
- 3 tablespoons Parmesan cheese grated
- salt & pepper to taste
- 4 cups brown rice cooked
Instructions
- Preheat oven to 400 degrees. Coat 2 baking sheets with Pam.
- Brush olive oil or butter over salmon fillets. Sprinkle with salt. Sprinkle lemon pepper over top of fillets. Place salmon on prepared baking sheet. Place cauliflower on another baking sheet, sprinkle with olive oil, salt & pepper and Parmesan cheese. Roast cauliflower about 15 minutes and then put salmon in oven along side the cauliflower. Roast another 15 minutes. Turn oven on broil for a minute or so to brown salmon and cauliflower should be golden brown & tender. Remove salmon if necessary to cook cauliflower longer.
- Combine tomatoes, basil and capers in a bowl and season with salt &
- pepper.
- Serve the salmon fillets over the brown rice with tomatoe mixture spooned over top. Serve the cauliflower along side.
