Red Chile Sauce

Red Chile Sauce

Ingredients

  • 1/4 cup vegetable oil
  • 1/3 cup onions finely diced
  • 2 garlic cloves minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup New Mexico red chile powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 cups chicken stock

Instructions

  • Place vegetable oil in a large saucepan and heat until hot. Add onions & garlic and sauté until tender.
  • Add flour and whisk for 3 minutes. Add red chile powder, cumin and coriander and whisk for 2 minutes.
  • While whisking constantly, slowly add heated chicken stock. Continue whisking for 5 minutes or until it thickens. Stir in salt.
