Red Chile Sauce

Ingredients
- 1/4 cup vegetable oil
- 1/3 cup onions finely diced
- 2 garlic cloves minced
- 2 tablespoons all-purpose flour
- 1/2 cup New Mexico red chile powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 2 cups chicken stock
Instructions
- Place vegetable oil in a large saucepan and heat until hot. Add onions & garlic and sauté until tender.
- Add flour and whisk for 3 minutes. Add red chile powder, cumin and coriander and whisk for 2 minutes.
- While whisking constantly, slowly add heated chicken stock. Continue whisking for 5 minutes or until it thickens. Stir in salt.
