No-Bake Peanut Butter Pretzel Bars
Servings: 24 bars
Ingredients
INGREDIENTS:
- 2 1/2 cups pretzels crushed (about 4 cups uncrushed)
- 3/4 cup butter melted
- 2 cups powdered sugar
- 1 cup creamy peanut butter
Topping
- 2 cups mini-chocolate chips
- 1/3 cup creamy peanut butter
Instructions
- Line a 9 x 13 baking dish with parchment paper. Set aside.
- In a large bowl, add the crushed pretzels and powdered sugar. Mix together with a whisk or a fork.
- Add the melted butter and stir until combined. Mixture should look like pea-sized clumps.
- Heat the peanut butter in the microwave for 20 seconds on high. Mix the peanut butter into the pretzel mixture until all is incorporated.
- Scoop the mixture into the prepared baking dish and spread evenly in a thin layer.
- With an extra piece of parchment paper, press down with fingertips until you have one solid even layer.
- To make the topping, add the chocolate chips and peanut butter to a microwave-safe bowl.
- Heat chocolate and peanut butter in the microwave on half-power. Start with 1 minute and stir then 15 second intervals stirring in between until chocolate is smooth.
- Pour the chocolate mixture over the peanut butter/pretzel mixture. Take a spatula and smooth the top evenly.
- Cover with lid or plastic wrap and place in the freezer for at least an hour before slicing into bars. Store in the refrigerator until ready to serve.
Notes
