Grilled Pork Chop with Figs & Bourbon Glaze

Ingredients

  • 4 center cut thick pork loin chops with bone
  • Marinade
  • 3 tablespoons Dijon Mustard
  • 2 cloves Garlic peeled and crushed
  • 1 shallot sliced
  • 1/4 cup olive oil
  • 1 tb s salt
  • 1 1/2 teaspoons pepper
  • 2 tablespoons chopped Rosemary
  • Sauce
  • 1/2 cup Brown Sugar
  • 1/2 cup Bourbon
  • 1/2 cup Soy Sauce
  • 2 tablespoons Green peppercorns
  • 1 sweet onion sliced

Instructions

  • Blend together marinade ingredients and rub on both sides of pork chops. Let sit for 2 to 6 hours.
  • Bring these ingredients to a boil and remove from heat
  • Add 20 dried figs and let rehydrate.
  • Grill Pork Chops on a medium hot fire. We recommend cooking to medium, about 150˚ F internal temperature.
  • Garnish Pork with Figs and use glaze as a sauce over the Grilled pork chop. Serve with Mashed potatoes and braised Greens.
