Firecracker Chicken Drummies

Ingredients
- 2 tablespoons chili powder
- 1 1/2 teaspoons dried oregano leaves
- 1 1/4 teaspoons cayenne pepper
- 1 teaspoon garlic salt
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 2 lbs. chicken wing drummettes
- Sour cream blue cheese or ranch salad dressing
- Paprika optional
Instructions
- In 1-gallon resealable food-storage plastic bag, place all ingredients except chicken, sour cream and paprika. Seal bag; shake to blend seasonings. Add chicken; seal bag and shake until chicken is coated with seasonings. Refrigerate at least 1 hour to marinate but no longer than 24 hours.
- Heat gas or charcoal grill. Place chicken in grill basket (grill "wok"). Place basket on grill over medium heat. Cover grill; cook 20 to 25 minutes, shaking basket to turn chicken after 10 minutes, until juice of chicken is clear when thickest part is cut to bone (180°F).
- Or preheat oven to 450 degrees and oil a cast iron grill skillet or regular iron skillet. Preheat skillet in oven until hot. Place half of the chicken in the skillet. Bake about 10 minutes. Turn chicken and bake 10 minutes longer or until done.
- Serve chicken with sour cream or salad dressing sprinkled with paprika.
Notes
You could also use the whole chicken wing or even legs or thighs which would require more rub.
They are just as good cooked in an iron skillet in the oven.
