Carrot Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 1/4 cups vegetable oil
  • 4 large eggs
  • 3 cups carrots grated
  • 1 cup pecans chopped
  • 8 oz. cream cheese softened
  • 1 stick butter softened
  • 1 lb. confectioner's sugar
  • 1 cup pecans chopped
  • 2 teaspoons vanilla

Instructions

  • Sift dry ingredients together. Add oil and mix well. Beat in eggs one at a time. Blend in carrots and nuts. Bake in (2) 9 inch greased and floured layer cake pans for 25-40 minutes at 325 degrees. Cool.
  • Mix icing ingredients together and frost cooled layers.
