Carolina Plantation Grits Casserole

Ingredients

  • 16 ounces bulk sausage hot
  • 6 large eggs
  • 1/2 cup Swiss cheese grated
  • 1 cup sharp cheddar cheese grated
  • 1 cup grits stoneground

Instructions

  • Cook grits as directed on label:
  • Mix: 1 cup stoneground grits
  • 4 1/2 cups water
  • 1 teaspoon salt
  • 2 tablespoons butter
  • Combine all ingredients in large sauce pan. Bring to a boil over medium heat. Reduce heat to low, cover and simmer for 45-60 minutes, stirring occasionally, until thick.
  • Brown and drain sausage.
  • Whisk eggs and season with salt and pepper.
  • Mix grits, sausage, eggs, cheeses, and salt and pepper to taste. Pour into a 13x9
  • casserole dish sprayed with Pam. Sprinkle with paprika. Bake at 350
  • degrees for 30-40 minutes.

Notes

NOTES : I use Carolina Plantation Stone Ground Grits from the Village Butcher and Jimmy Dean Hot Sausage.
