Carolina Plantation Grits Casserole

Ingredients
- 16 ounces bulk sausage hot
- 6 large eggs
- 1/2 cup Swiss cheese grated
- 1 cup sharp cheddar cheese grated
- 1 cup grits stoneground
Instructions
- Cook grits as directed on label:
- Mix: 1 cup stoneground grits
- 4 1/2 cups water
- 1 teaspoon salt
- 2 tablespoons butter
- Combine all ingredients in large sauce pan. Bring to a boil over medium heat. Reduce heat to low, cover and simmer for 45-60 minutes, stirring occasionally, until thick.
- Brown and drain sausage.
- Whisk eggs and season with salt and pepper.
- Mix grits, sausage, eggs, cheeses, and salt and pepper to taste. Pour into a 13x9
- casserole dish sprayed with Pam. Sprinkle with paprika. Bake at 350
- degrees for 30-40 minutes.

NOTES : I use Carolina Plantation Stone Ground Grits from the Village Butcher and Jimmy Dean Hot Sausage.
