Black Bean Burgers

Ingredients
- 3 cups black beans cooked and drained
- 1 cup brown rice cooked
- 1/3 cup tahini
- 1/4 cup minced yellow onion
- 2 teaspoons dry mustard
- 1/3 bunch parsley chopped
- 1 teaspoon thyme
- 2 eggs beaten
- about 1/2 cup flour
- salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Slightly mash 2 cups of the black beans. Combine with the rice, tahini, onion, mustard, parsley, thyme, eggs and remaining 1 cup whole beans. Mix well, adding just enough flour so that the mixture holds together to form patties. Season to taste with salt and pepper.
- Heat the oil in a large skillet over medium-high heat. Drop mixture by scoops (about 8) into hot oil, flatten with spatula to about 1/2" thick and fry until browned & crispy on both sides. Fry in 2 batches and add a little more oil if necessary.
Notes
Tasty but needs a little more kick like garlic salt, cayenne pepper, chopped jalapenoe peppers or red or green bell peppers.
