Pasta with Broccolini & Sausage

Ingredients
- olive oil if desired
- 1 lb. Italian sausage
- 3 cloves garlic thinly sliced
- 1/4 teaspoon red pepper flakes
- 1 lb. broccolini washed, dried & coarsly chopped
- 1 lb. pasta
- salt & black pepper to taste
- parmesan cheese grated
Instructions
- Bring a large pot of water to a boil with a little salt.
- Remove the casings from the sausage if it is not fully cooked, and cut or crumble into small pieces. Cook in a large skillet over medium-high heat, until browned.
- Add the garlic and red pepper flakes, cook for a minute, and then add the broccolini. Stir in, turn off heat and cover the skillet.
- Cook the pasta according to the box directions. When al dente, drain the pasta and add it to the skillet. Heat up, stirring. Add some grated parmesan cheese and salt and pepper if necessary. Serve with additional cheese if desired.
