Carrot Cake

Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 1/4 cups vegetable oil
- 4 large eggs
- 3 cups carrots grated
- 1 cup pecans chopped
- 8 oz. cream cheese softened
- 1 stick butter softened
- 1 lb. confectioner's sugar
- 1 cup pecans chopped
- 2 teaspoons vanilla
Instructions
- Sift dry ingredients together. Add oil and mix well. Beat in eggs one at a time. Blend in carrots and nuts. Bake in (2) 9 inch greased and floured layer cake pans for 25-40 minutes at 325 degrees. Cool.
- Mix icing ingredients together and frost cooled layers.
